Recipe(tried): Corner Bakery Chicken Salad

CORNER BAKERY CHICKEN SALAD

4 roasted chicken breasts, chopped (I roast them, salted & peppered, with the skin on, then remove most of the skin)
1/3 of a small red onion, chopped
2 celery ribs, chopped
1/2 Granny Smith apple, chopped
1/4 cup dried currants (which are small raisins)
1 1/4 oz. thinly sliced almonds
1/4 cup Miracle Whip (try it also with Mayonnaise)

Chop everything and toss together.

It is supposed to be on the sweet side, hence the Miracle Whip, which I usually don't like in chicken salad. May make for a different flavor but still yummy.
