Recipe(tried): Chicken Tortilla Salad

This is a great, healthy summer salad. Hope you all like it.

CHICKEN TORTILLA SALAD

1 Tbsp. olive oil
2 chicken breasts, skinned, boned, and diced
1/2 tsp. garlic salt
1 (16 oz.) can corn, drained
1 cup chopped tomatoes
1 (15 oz.) can black beans, drained and rinsed
5 scallions, sliced
2 avocadoes, diced
1 head lettuce, torn into pieces
1 red pepper, diced
1 to 2 cups Monterey Jack cheese, shredded
3 cups slightly crushed blue corn chips

Dressing:
1/4 cup cider vinegar
3 Tbsp. honey
1-1/2 tsp. cumin
1/4 tsp. salt
1/4 tsp. pepper

Cook chicken in oil until done. Transfer to bowl and sprinkle with garlic salt. Stir corn into chicken and refrigerate about 30 minutes. Combine dressing ingredients. Combine all salad ingredients and toss with dressing. Garnish with sour cream or salsa if desired.
