Recipe: Sardine Saladettes

Sardine Saladettes

1 can large sardines
6 medium-size lettuce leaves

LEMON EGG DRESSING:
reserved oil from sardines
1/2 lemon, juice only
1/2 plus 1 tsp pimento, shredded
1 tsp parsley, minced
1/4 tsp salt
1/8 tsp pepper
1 hard boiled egg, chopped fine.

Remove sardines from can and chill; reserve oil.

Combine all dressing ingredients and mix well.

Place one sardine on each lettuce leaf. Spoon on the Lemon Egg Dressing.
