Recipe: Chicken with Broccoli (using cooked chicken, Corning Ware recipe, 1960's)

CHICKEN WITH BROCCOLI


1/4 cup butler or margarine
1/4 cup flour
2 cups chicken stock
1/4 cup sherry
1/4 teaspoon ground nutmeg
1 teaspoon Worcestershire sauce
1/2 cup heavy whipping cream, whipped
2 packages (10 ounces each) frozen broccoli
12 to 16 slices of cooked chicken
1 cup grated Parmesan cheese

Melt butter in a 1 1/2-quart saucepan over low direct heat. Stir in flour. Add chicken stock and continue cooking and stirring over low heat until mixture thickens, about one minute. Remove from heat and add sherry, nutmeg, and Worcestershire sauce. Fold in whipped cream.

Cook broccoli in oven-proof skillet according to directions on package. Drain.

Pour half of cream sauce over broccoli. Arrange chicken slices on broccoli. Pour on remaining sauce and sprinkle with Parmesan cheese.

Place skillet under broiler for about five minutes or until cheese is brown and topping is bubbly.

Makes 4 to 6 servings
