Recipe: Chicken with Snow Peas

CHICKEN WITH SNOW PEAS

1 1/2 cups chicken broth (canned or made with bouillon cube), divided use
1 tablespoon cornstarch
3/4 teaspoon sugar
3/4 teaspoon salt
3 tablespoons soy sauce
3 whole chicken breasts (about 8 ounces each) boned and cut in thin strips
Salt and pepper (to taste)
3 tablespoons vegetable oil
3 cups diagonally sliced celery, cut 1/4 inch thick
1 1/2 cups sliced onions
1 (6 ounce) package frozen (or 2 cups fresh) snow peas
3 cups hot cooked rice (for serving)

Blend cornstarch, sugar, salt, soy sauce, and 1 cup chicken broth; set aside.

Season chicken with salt and pepper. Saute in oil for 1 minute or until tender.

Add celery, onions, snow peas, and remaining 1/2 cup chicken broth. Cover and steam for 1 1/2 minutes. Remove cover and stir once.

Stir cornstarch mixture into chicken-vegetable mixture. Cook and stir about 1/2 minute or until sauce is slightly thickened.

Serve at once over beds of fluffy rice.

Makes 6 servings
