Recipe: Chickpea and Citrus Salad

Chickpea and Citrus Salad
Serves 1

55g/2oz chickpeas
1 orange, zest and segments only
medium red chili, de-seeded and finely chopped
2 tbsp olive oil
90g/3oz bag baby leaf salad
salt and freshly ground black pepper

In a medium bowl, mix together the orange zest, chili, oil and seasoning. Toss the chickpeas, orange segments and salad leaves in the dressing and serve.
