Recipe: Cream of Potato Soup (crock pot)

CREAM OF POTATO SOUP (CROCK POT)

Note from source: My mom gave me this recipe last year. It is wonderful!

9 potatoes
1 can condensed cream of mushroom soup
2 cups milk
1/4 cup celery
Medium onion
1/2 stick (1/4 cup) margarine
ham or bacon
2 tbsp flour
1/3 cup grated carrots
salt & pepper
Instant mashed potatoes (optional)
potato water
Corn starch (optional)

Cook potatoes, drain (save water). Mash with mixer, slowly add potato water (don't let it get thin).

Mix cream of mushroom soup with milk. Add potatoes, heat through.

Saute celery and onion in margarine.

Add cubes of ham or bacon. Cook till tender and lightly brown.

Add flour, add to potatoes. Add carrots, salt and pepper to taste.

Put in crock pot on low. Cook until heated through, and carrots are done.

Can be thickened with corn starch or instant potatoes. If needed, thin with potato water. Soup should be thick.
