Chilled Lemon Chicken with Mushrooms
This makes a good light dinner. I served it with a side dish of green beans & some fruit for dessert.

Serves 4

4 skinless, boneless chicken breast halves, cut in 1/2-inch pieces
1/3 cup lemon juice
1 pound mushrooms, sliced
1/2 teaspoon salt
1/4 teaspoon grated lemon peel
1/8 teaspoon coarsely ground black pepper
Lettuce leaves
Lemon slices (garnish)

Place chicken in a bowl with a tight-fitting lid; add lemon juice, tossing lightly to coat. Cover; refrigerate 30 minutes.

In a large skillet, combine mushrooms, chicken, lemon marinade, salt, lemon peel, and pepper. Cover; cook over low heat 8 to 10 minutes, until chicken and mushrooms are tender, stirring often.

Chill mixture. Drain; discard liquid. Serve over lettuce leaves. Garnish with lemon slices.
