Recipe: Tofuna Salad Sandwich

"Even though it tastes like tuna, there's nothing fishy about this sandwich spread! Depending on your vegetarian persuasion, you can throw in chopped hard-boiled egg for extra protein and added flavor. The filling is kind of crumbly, so you might want to put it in a pita pocket instead of between normal bread slices. Store any extra filling in the fridge for another day."
4 ounces baked tofu
1/4 cup reduced-fat mayonnaise, tofu mayonnaise or regular mayonnaise
1/4 cup finely chopped celery
1 dill pickle, finely chopped
1 pita pocket or 2 slices whole wheat bread
In a small bowl, crumble the tofu with your hands. Add the mayonnaise, celery and pickle. Stir to combine thoroughly.
Scoop the filling into a pita pocket or spread it between bread slices. Wrap it in aluminum foil or plastic wrap if not serving immediately.
For all types of vegetarians if using tofu mayonnaise. For semi-vegetarians and ovo-lacto vegetarians if using normal mayonnaise.
