Recipe: Chocolate Chip Pumpkin Muffins

Misc.

Sounds like a strange combination but it is very good! The muffins come out nice and moist. Usually any recipe for a loaf bread (i.e. banana bread) will make a batch of 6 jumbo muffins.
CHOCOLATE CHIP PUMPKIN MUFFINS
1 1/2 cups flour
1 cup sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp clove
1/4 tsp allspice
1/4 tsp salt
1 cup cooked canned pumpkin
1/2 cup butter melted
1 cup chocolate chips
2 eggs
(for the spices you can substitute pumpkin pie spice or apple pie spice)
_________________________________
Preheat oven to 350. Grease or line muffin tin. Combine dry ingredients and set aside. In large bowl, beat eggs. Stir in pumpkin and melted butter. Blend well. Add dry ingredients, stiring until just moistened. Stir in chocolate chips. Spoon into muffin tin and bake about 20-25 minutes.
