Recipe: Chocolate Fudge - This 1947 Household Searchlight recipe is one of ten
Desserts - Candy, ChocolateCHOCOLATE FUDGE
2 cups sugar
2 squares unsweetened chocolate or
6 tbsp. cocoa
2 tbsp. butter
2/3 cup milk
few grains salt
1 tsp. vanilla flavoring
Combine sugar, milk, butter, salt and grated chocolate or cocoa. Cover until boiling point is reached. Boil to soft ball stage (234-238 degrees)*.
Add flavoring and cool, without stirring, to room temperature. Beat until mixture is creamy, thick, and will hold its shape when dropped from a teaspoon.
Drop by teaspoonfuls onto waxed paper, or pour unto well-buttered, shallow pan. Cut in squares.

*Note: The recipe does not say to drop into cold water in cookbook, but this is how my grandmother, the original owner of my Searchlight, taught me to test the mixture. When dropped into cold water, the mixture will form a soft ball which holds together. If undercooked, it will make great chocolate fudge topping for ice cream!
