CHRISTIE'S CROCK POT STUFFING
1 lb pork sausage
1 cup butter
2 cups chopped onion
2 cups chopped celery
2 cups chopped mushrooms
1/4 cup parsley sprigs
2 boxes Stove Top Stuffing Mix (1 chicken and 1 turkey)
1 bag bread cubes
1 1/2 to 2 teaspoons poultry seasoning
1 1/2 to 2 teaspoons sage
1 1/2 to 2 teaspoons thyme
1 1/2 to 2 teaspoons basil
1 1/2 teaspoons salt
1 teaspoon pepper
couple of pinches of rosemary
3 1/2 cups chicken broth
2 eggs well beaten
Brown the pork sausage, drain well and set aside.
Melt butter and saute onion, celery, mushrooms, and parsley until lightly caramelized.
Mix Stove Top stuffing mix, bread cubes, and sausage in a large bowl. Pour butter mixture over bread cubes, add seasonings and toss well. Add broth and eggs and mix well, but gently. Pack mixture lightly into the crock pot.
Cover and set to high for 45 minutes then reduce heat to low and cook for 4 to 6 hours.
