CITRUS HERB VINAIGRETTE
3/4 cup orange juice
1/4 cup vinegar
1/4 cup olive oil
1/4 teaspoon ground black pepper
1 teaspoon fresh thyme or basil
Combine all ingredients in a screw-top jar. Shake well to mix. Chill, covered, for up to one week.
Before using, let stand to room temperature, about 15 minutes, and shake well.
Makes 4 servings
