Recipe: Clams Au Gratin
Misc. Do you mean baked clams? If so, here is a basic Clams Au Gratin recipe by James Beard that you can *add or vary ingredients. Add a dash of oregano to the mixture and I think they'll taste great.
1/2 c. finely chopped mushrooms, 1/2 c. finely chopped scallion, 1/4 pound butter, 2 T. finely chopped parsley, 2 T finely chopped peeled and seeded tomato, salt and pepper, 36 small clams on the half shell, 1/3 to 1/2 c fresh breadcrumbs.
Saute mushrooms and scallion in 6 T of butter for 3 min. Mix in remaining ingredients (except clams.) Spoon over the clams on halfshell, sprinkle with some breadcrumbs *(to which I would add some oregano)dot with remaining butter cut in teeny pieces and bake in a 400 degree oven for 5 to 8 minutes or until clams are heated through.
