Recipe: Shrimp and Greens Over Grits (using chicken sausage, tomato, and bell pepper)

FOR THE GRITS:
3/4 cup quick cooking grits
1 3/4 cups nonfat milk
1 1/4 cup water
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
FOR THE SHRIMP:
2 teaspoons olive oil
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1 reduced sodium spicy chicken sausage, cooked and chopped
1/2 cup chopped tomato
1 clove garlic, minced
1 (6 oz) can Bumble Bee Deveined Medium Shrimp
2 cups chopped kale or collard greens
1/2 teaspoon paprika
1/2 teaspoon dried thyme
1/4 teaspoon chili powder
Prepare grits according to instructions, using 1 3/4 cups milk and 1 1/4 cup water. Stir pepper, and garlic powder into cooked grits, cover, and set aside.
Heat olive oil in a large skillet over medium-high heat. Add onion, bell pepper, chicken sausage, and tomato and saute until tender, about 5 minutes.
Add the garlic, shrimp, kale, paprika, thyme, and chili powder and saute until kale is wilted, about 3 more minutes.
TO SERVE:
Divide grits into 2 bowls and top each with half the shrimp mixture.
Makes 2 servings
