Recipe: Coconut a la Creme (Knox Gelatine) (blender)

COCONUT A LA CREME

2 envelopes Knox Unflavored Gelatine
1/2 cup cold milk
1/2 cup milk, heated to boiling
3 tablespoons honey
1 (16 oz.) container creamed cottage cheese
1 (3 oz.) package cream cheese, softened
1 (3 1/2 oz.) can flaked coconut

In Osterizer blender container, sprinkle Knox Unflavored Gelatine over cold milk; let stand 3 to 4 minutes.

Add hot milk; cover and process at STIR (LO) until gelatine dissolves, about 2 minutes.

Add honey and cottage cheese; cover and process at LIQUEFY (HI) until smooth.

With blender running, remove feeder cap and add cream cheese, one cube at a time until blended.

Stir in coconut. Pour into 4-cup mold or bowl and chill until firm. Garnish, if desired, with fruit.

Makes about 8 servings
