Recipe(tried): Coconut Banana Bread

Coconut Banana Bread

1 cup sugar
1/2 cup vegetable oil*
2 eggs, beaten
1 cup mashed bananas (about 2 medium)
1/2 tsp. vanilla
1 cup flour
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. cinnamon
3/4 cup chopped nuts
1 (3 oz.) pkg coconut cream pudding

Preheat oven to 350 degrees F.

Blend sugar and oil. Add eggs, mashed banana and vanilla.

Mix dry ingredients together, including nuts. Combine wet ingredients with dry until just moistened.

Pour into one 9x5-inch loaf pan or three 4x7x2-inch mini greased and floured loaf pans.

Bake for 50-60 minutes for the 9x5-inch loaf pan and 45 minutes for the mini loavess.

These are really yummy. Probably from all the sugar.

*I did use 1 1/2 cups ground flaxseeds for the oil and they came out very moist. I did not lower the temperature so they were a little dark, but they still tasted good.
