This is one of my tried and true favorites.
CRANBERRY BANANA NUT BREAD
Source: Taste of Home - From Bells Best 1
This is for all you have those extra cans of cranberry sauce from the holiday. I make it year-around.
2/3 cup margarine
1 1/3 cup sugar
3 eggs
3 cups mashed banana
3 1/2 cups flour
4 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1 cup nuts
1 (1 lb) can WHOLE berry cranberry sauce
Cream margarine and sugar, add eggs and beat well. Stir in bananas. Gradually add dry ingredients. Stir in nuts, fold in cranberry sauce. Pour into 2 greased and floured bread pans.
Bake at 350 for45 - 55 minutes
My notes: I baked the 8 mini-loafs for about 35-40 minutes... testing several times for doneness. I used PAM spray and did not spray the mini-loaf pans but did grease/flour the loaf pan. I added pecans but any nut would be good.

I found the recipe really easy to make and very good. I especially liked the tang of the cranberries against the chunks (well, must have not beat/mashed the bananas enough). The banana bread was light and moist, and the cranberries added a tang. I thought the bread would turn pink/red but it looked like banana bread. I would probably add more cranberries next time since I like them a lot. I made one loaf and about 12 mini loafs. I would make this recipe again.
