SQUASH CORNMEAL MUFFINS
3/4 cup flour
1/3 cup cornmeal
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 egg, beaten
1/3 cup milk
1 cup grated zucchini squash
3 tablespoons butter, melted
Preheat oven to 400 degrees F. Grease muffin tin cups.
In a mixing bowl combine flour, cornmeal, sugar, baking powder, and salt.
Combine beaten egg and milk and stir into first mixture with grated squash, then melted butter. Pour into greased muffin tins.
Bake in preheated 400 degrees F oven 18-20 minutes.
