Recipe(tried): Psyllium Husk Pancakes

Breakfast and Brunch
Easy as pancakes. Everyone I have made them for loves them so hoping you all do too. Sounds a bit weird but tastes great.

PSYLLIUM HUSK PANCAKES

1 egg
3 tbsp water - adjust a little if needed
1 tsp xylitol or sugar as preferred
1 tbsp psyllium husks

Mix egg, water, sugar together - have pan/pans heating. Add husks last as the mixture thickens up when left sitting. (Bit of trial and error depending on size egg etc., but generally I find by the time I get maple syrup out of cupboard the mix is ready to tip into pan.)

Cook until browned to color you like, flip and cook other side.

Have made them night before and taken to work. Heat quickly in microwave if want warm.

Have used low fat ricotta cheese mixed with skim milk to make a pouring sauce over the top. Can use chopped banana, strawberries etc to top as well. No sugar maple syrup over the top - yummo!

Makes between 2 and 3 large pancakes with little calories or fat.
