Pound Cake Recipes Using Lemon Extract Previously Shared

Pound Cake (using White Lily flour)
Aunt Hattie's Pound Cake (using oil and evaporated milk)
Poor Man's Pound Cake (using milk and baking powder)
Best Pound Cake with Lemon Icing
POUND CAKE
2 sticks Blue Bonnet margarine, room temperature
1/2 cup Crisco vegetable shortening
3 cups sugar
5 large eggs
3 cups White Lily all-purpose flour
1/2 tsp. baking powder
1 cup milk
1 tsp. orange extract*
1 tsp. lemon extract*
Cream margarine and Crisco together; add sugar one cup at a time. Add eggs one at a time; beat well.
Sift flour and baking powder together.
Add milk and flour mixture a little at a time to the sugar mixture. Beat well each time. Add flavoring(s); beat well. Pour into a greased and floured tube pan.
Bake in preheated 350 degree F oven for 1 hour and 15 minutes.
*May substitute 1 tbsp. lemon extract for 1 tsp. each orange and lemon extracts.
AUNT HATTIE'S POUND CAKE
3 cups sugar
1 cup (2 sticks) butter or margarine, softened
1/2 cup Wesson vegetable oil
5 large eggs
3 cups flour
1/4 tsp. salt
1 cup evaporated milk
1 tsp. each lemon and vanilla extract
Grease and flour a tube pan.
Cream sugar, butter, and oil together. Add eggs one at a time beating well after each.
Combine flour and salt.
Alternately add (undiluted) evaporated milk and flour mixture to the sugar mixture, beating well after each addition. Pour batter into prepared tube pan.
Put cake in cold oven, turn oven temperature to 325 degrees F and bake for almost 2 hours until cake tester comes out clean.
POOR MAN'S POUND CAKE
2 cups unsifted all-purpose flour
1 1/2 cups sugar
4 eggs
1 cup (2 sticks) margarine (or 1 stick margarine and 1 stick butter)
1/2 cup milk
1 tbsp. baking powder
1 tbsp. vanilla extract
1/2 tsp. lemon extract
Put all ingredients together in a large mixing bowl. Beat at high speed for 10 minutes. Do not underbeat. Pour batter into an ungreased tube pan. Place in COLD oven. Set temperature at 350 degrees and bake for 1 hour. Bayside, New York
BEST POUND CAKE
1 cup butter, softened
3 cups sugar
5 eggs
1 tsp. baking powder
1 cup milk
3 cups sifted flour
2 tsp. vanilla
2 tsp. lemon extract
1/4 tsp. salt
Lemon Icing (optional, recipe follows)
Cream butter and sugar. Add eggs, 1 at a time, beating well.
Combine baking powder and milk in a separate bowl; add alternately with flour to creamed mixture. Add flavoring, extract and salt. Mix well. Pour into greased tube pan or 2 loaf pans.
Bake at 325 degrees F for 1 hour or until done.
If desired, spread Lemon Icing over cooled cake.

1 1/2 cups powdered sugar
1/4 tsp. salt
1 tbsp. lemon juice
2 tbsp. shortening
1 tsp. grated lemon peel (optional)
1 tbsp. water
Combine all ingredients for the icing; mix well.
