DICED CHICKEN WITH CHILI PEPPER
"This is a very fast dish to prepare. Nuts like cashews or peanuts are an excellent addition to this recipe. Add more chili peppers if you want a spicier dish."
1 pound skinless, boneless chicken breast
1/4 teaspoon salt
Dash white pepper
2 teaspoons cornstarch
2 tablespoons vegetable oil
1/4 cup diced onion
2 small hot red chili peppers, chopped
1 teaspoon minced garlic
1 teaspoon finely chopped fresh ginger
2 tablespoons hoisin sauce
1 tablespoon soy sauce
2 tablespoons chopped green onion
Cut the chicken into 1/2-inch cubes.
In a medium bowl, mix the salt, pepper, and cornstarch together. Toss the mixture with the chicken and set aside.
Heat a wok or nonstick skillet over high heat and add the vegetable oil. Add the chicken, onion, chili peppers, garlic, and ginger and cook until the chicken turns white, stirring to separate the pieces, about 2 minutes.
Add the hoisin sauce and soy sauce and continue to cook for 2 minutes.
Remove from the heat and place on a serving platter. Garnish with the green onion.
Makes 4 servings
