A great dish for company, very, very yummy!! I have served this many times to rave reviews.
COMPANY CHICKEN
Makes 4 servings and is easily doubled
4 large boneless, skinless chicken thighs (or breast halves)
3 eggs, beaten to blend
1 cup unseasoned dry bread crumbs
salt and pepper to taste
10 Tablespoons (1 1/4 sticks) butter
1 lb. mushrooms, sliced
4 slices Muenster cheese
1/4 cup chicken broth
Pat chicken dry. Place in bowl and pour eggs over. Cover and refrigerate 1-2 hours.
Preheat oven to 350 degrees F.
Drain chicken and dispose of eggs.
Mix breadcrumbs with salt and pepper to taste. Dredge chicken in crumbs.
Melt 8 Tablespoons butter over medium heat. Brown chicken 3 minutes per side just until brown. Place in baking dish that has been sprayed with nonstick cooking spray.
Melt 2 Tablespoons butter and cook mushrooms in it just until soft, about 5 minutes. Spoon mushrooms over chicken.
Top with cheese slices. Pour broth around chicken pieces.
Bake until chicken is cooked through, about 20 minutes. Serve hot.
