Recipe: Summer Casserole (using squash, ground beef and Italian sausage)

SUMMER CASSEROLE

1 lb ground beef
1 lb mild Italian sausage
1 onion, chopped
1 green pepper, cut in in strips
1 quart spaghetti sauce (4 cups)
4 medium yellow squash or zucchini, sliced
1/2 lb mozzarella cheese, thinly sliced
1/2 cup grated parmesan cheese

Brown meats in heavy skillet.

Add onion and pepper and saute until tender. Drain off and discard excess liquid.

Add spaghetti sauce and simmer for 1 1/2 hours.

Put half of the squash or zucchini into a 13x9-inch pan. Cover with half of the sauce and meat mixture, then with half of the mozzarella cheese. Make second layer, using remaining ingredients. Top with parmesan cheese.

Bake at 350 for 45 minutes.

Makes 10 servings
