Recipe(tried): Congrats from New Grandparents in AZ! - Clare's Easy Pasta

Kathy, Congratulations! We also just became grandparents of our first grandbaby, also a boy! Quite the blessing, isn't it? Went the low-fat route two years ago and a friend made us a dinner one night that your recipe reminded me of:

Clare's Easy Pasta
1 pkg. Alouttte Garden Herb Cheese (low-fat variety)(Comes in a tub and is found in the specialty cheese section, usually in front of the deli. of the supermarket)
Sliced mushrooms
Some cleaned shirmp or crabmeat
Evaporate skim milk
Cooked hot pasta

Saute the mushrooms and seafood in non-stick cooking spray. Add cheese to skillet and stir to melt. Add milk to reach desired consistancy and serve over hot pasta. Yum! Sometimes I make this with just the mushrooms.
