Cookie Press Cookies
1 cup butter
3/4 cup sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups sifted flour
Cream butter, adding sugar gradually; beat until light. Add egg and vanilla; mix well. Add sifted dry ingredients. At this point, the dough can be divided and food coloring mixed in. Fill cookie press with dough and shape on ungreased cookie sheets.
Bake at 400 degrees for 10 to 12 minutes. Remove from cookie sheets and cool on racks. When completely cool, cookies can be dipped in melted chocolate then into jimmies or ground nuts to decorate.
Buttery Spritz Cookies
1 1/2 cups butter
1 cup sugar
1 tsp baking powder
1 egg
1 tsp vanilla
3 1/2 cups flour
Beat butter with an electric mixer on medium speed for 30 seconds. Add sugar and baking powder and beat well. Add egg and vanilla. Beat until well combined. Beat in as much flour as you can. Stir in any remaining flour with a wooden spoon.
Do not chill dough. Pack dough into a cookie press. Force dough through press onto cookie sheet.
Bake 375 oven for 8 to 10 minutes. Cool on wire racks. Makes about 84 cookies.
Chocolate Spritz Cookies
1/2 c. shortening
1 c. sugar
1 egg
2 T. milk
1/2 t. vanilla
2 oz. unsweetened chocolate, melted
2 c. sifted flour
1/4 t. salt
Cream shortening and sugar well. Beat in egg, milk, and vanilla. Stir in melted chocolate. Sift flour and salt together and gradually add to other ingredients.
Press onto an ungreased cookie sheet using the
scotty dog or camel plate. Add one silver
nonpariel for an eye. Bake at 375 F for 8 - 10 minutes. Makes 3 - 4 dozen.
