Recipe: Corn Pudding

Corn Pudding

I got this recipe from a friend and have passed it on for years. It is great reheated too. Carries well when you have to bring a dish to a party.

Preheat oven to 350. Spray 2 quart baking dish with Pam or the like.

Spread in the prepared baking dish:
1 can whole kernel corn (drained)

In blender put:
1 can evaporated milk
1/3 cup sugar
dash of salt and pepper
1 tsp vanilla
3 whole eggs
3 tablespoons cornstarch
Blend about 10 seconds.

Pour mixture into large bowl and add:
2 cans cream style corn
Mix well.

Pour mixture over whole kernel corn. Mix gently.
Dot top with:
2-3 tablespoons butter or margarine

Place on rack in middle of oven and bake for 50 to 60 minutes. Let sit about 5 minutes. Serve.
