Recipe(tried): Corn Salad - You're in luck manyhats!

I usually use canned corn in my corn salad. I have used frozen before. Tonight I will use this recipe.

Corn Salad

1 can corn niblets
1 lg. firm tomato, seeded and chopped
1 1/2 cucumber, seeded and chopped
2-3 green onions, chopped(I like green onions in my salad, any onion will do, add to your liking)
1/2-1 cup mayonnaise or salad dressing

I mix all together, salt and pepper. You can sprinkle a little paprika on top. I like to make it 1-2 hours ahead of time so it will be good and chilled.

Some people like chopped green pepper in their corn salad, but I like the cucumbers better. Hope you will try it sometime. It is very good.
