Recipe(tried): Cornbread Salad - Aprons and Jiffy Mix

I too am a fan of both aprons and Jiffy Mix. I have several different Aprons, I tend to go with the full ones though. I wear them whenever I am baking cakes, which is quite often! Here is a goodsalad recipe using jiffy mix. Thought all might like to see!

CORNBREAD SALAD

1 box Jiffy cornbread mix plus ingredients to make it
1 can shoepeg corn
1 tomato, chopped
3 to 4 green onions, chopped green and white parts
1 to 2 Tbsp mayonnaise

Mix cornbread according to package directions and bake. Cool and crumble.

To the crumbled mixture add the corn, tomato, and onions.

Add the mayonnaise until it is just moist and sticks together.

I don't usually salt and pepper, but the recipe that was given to me years ago called for it if desired.
