Recipe(tried): Blueberry Muffins (using Jiffy Cornbread Mix) - About JIFFY brand mixes....

These are the best mixes around. I remember when they were only 10 cents each!
A local food critic tests four brands of a particular food item each week and grades them. The week they tested cornbread mixes, JIFFY came out #1. I have to agree.

One of my favorites is the cornbread mix to which I add a heaping cup of fresh or frozen blueberries and make them in cupcake paper lined Texas size muffin pan. I get 4 or 5.

TIP: if you don't fill all the cups on a muffin tin, fill the empty cups half full of water. Also, if using frozen berries, DO NOT THAW.

As a special treat you can melt some butter, add lemon juice to it, to your taste, and dip the tops of the hot muffins in the butter mix then in sugar! TDF!!!
