I'm originally from Niagara Falls so it's funny you also make these cookies as not many people have heard of them. My polish grandmother always made frosted cottage cheese cutouts at Christmas. Misplaced her recipe but recently found it. Can't make out the recipe for the frosting but I know it had egg whites in it. It was basically double the previous comments recipe (Recipe: Jelly Cookies (using cottage cheese and Simply Fruit)) with the addition of 2 tsp vanilla. And we always drain the cottage cheese in a strainer or cheese cloth before adding to the butter. It's a sticky dough but needs chilled over night then we roll out, cut out, and bake at 350 degrees F.
