Recipe: Jelly Cookies (using cottage cheese and Simply Fruit)

JELLY COOKIES

1 cup margarine, softened
1 cup creamed cottage cheese
2 cups all purpose flour
Any flavor jam or Smucker's Simply Fruit
powdered sugar (optional, for dusting)

Preheat oven to 350 degrees F. Lightly grease a cookie sheet.

Cream together margarine and cottage cheese. Work in the flour and mix well. Wrap dough in waxed paper. Place in refrigerator overnight.

Next day roll out on floured board in thin sheet and cut in 3-inch square or use large round cookie cutter; place on a prepared cookie sheet.

Place a teaspoon of filling and fold; press edges together work a fork firmly.

Bake in a preheated 350 degree oven 15 minutes or until crust is brown and crisp.

If desired, roll in powdered sugar while hot.
