I'm sure you all have probably done this before and it's pretty simple, but it was really great.
My next door neighbor, age 80, fell last night and broke her wrist and got a bad cut on her forehead. She will need help for a couple of weeks, so we got our Lending Hands group together to start doing some dinners for her and her handicapped daughter, whom she takes care of.
I had a couple of packages of chicken thighs, but was going to be away most of the day, so threw this together to cook while I was gone. It was enough to bring half over to her and the rest for us.
8 to 10 boneless, skinless chicken thighs
1/2 cup dry white wine or chicken broth
1 or 2 large onions, coarse chop
Garlic powder
Lemon Pepper
salt
cornstarch and water for gravy at end
Rinse and clean excess "goop" off chicken thighs. Chop onions and lay half of them on the bottom of the slow cooker, pour in the wine or chicken broth.
Shake lemon pepper, garlic powder and salt to your liking on both sides of chicken. Layer them over onions, top with rest of the onions. Cover and cook on slow all day, or half day on high. I did the half day. At the end, I made a slurry out of a little cornstarch and cold water and thickened the juices - there isn't much juice but very flavorful.
They were fall-apart tender and moist. I did a large quantity of basmati rice and some dilled carrots. Added some soft dinner rolls and a piece of carrot cake from Publix to their dinners and brought it over to them.
