Recipe(tried): Earl's Grillato Fettucini (with chicken or shrimp)

i never wrote down the exact quantities but i used to work at earls and i made about a zillion grillatos in my time. it was my favorite too.
you need: chopped roma tomatos, rehydrated sundried tomatos, red onion, garlic, fresh basil, chopped green chili's (mexican food isle) about a tablespoon), whole green peppercorns (they come in a can or jar in liquid) a teaspoon or so, salt and pepper to taste, brandy and whipped cream and of course chicken or shrimp.

put a bit of olive oil in a pan, add onions and chicken and cook till the onions are a clear then add sundried tomatos, tomatos, garlic, chilis, peppercorns and garlic, salt and pepper. cook just a tiny bit then add a shot of brandy. flambe if you have a gas stove, dont worry about it if you dont. add whipping cream and simmer until reduced. add basil just before serving. pour over cooked fettuccini, top with fresh parmesean cheese et voila! yummy grillato.
