Recipe: Cream of Potato Soup (quantity recipe)

: Our church has services on the 6 Fridays of Lent and a, " Soup Kitchen Supper" prior to the services. Any recipes for meatless soups for 100+ will be appreciated.

Here's another recipe for you.

Cream of Potato Soup

Cook together until potatoes are soft:

8 lbs. potatoes, peeled and diced in 1/2 inch cubes
1 lb. onions, peeled and chopped
2 qts. beef or chicken bouillon
3 tbsp. salt
1 1/2 tsp. pepper

Mash the or push the potatoes through a strainer and combine with the broth mixture.

White sauce ingredients:
2 c. butter or margarine
1 1/2 c. flour
10 qts. hot milk

Melt the butter, stir in the flour until smooth. Add the milk, stirring continuously and cook until thickened, 5-10 minutes.

Just before serving, stir the potato mixture into the white sauce. Heat 5 minutes.

Garnish servings with chopped parsley or bacon bits.

Serves 50
