BROWN RICE WALDORF SALAD
"This is a wonderful meal that is filling, low fat, nutritious, and packed with energy. This is one of our favorite meals, and I love it because I can fix it ahead and have it waiting in the fridge.
This is a great dish to serve at home or take to a luncheon. It will probably be the only one like it there. I can assure you, you will be asked for the recipe!"
1 1/4 cups boiling water
1 cup uncooked instant brown rice* (Uncle Ben's)
4 medium red apples, diced (do not peel)
2 tablespoons lemon juice (fresh, or frozen Minute Maid)
2 tablespoons apple juice concentrate
3 celery ribs, thinly sliced (1 1/2 cup)
1/2 cup chopped pecans
1/2 cup raisins
1 cup plain nonfat yogurt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
Add rice to the 1 1/4 cups boiling water. Turn to lowest heat; cover and simmer for 10 minutes.*
While the rice cooks, chop the apples in a serving bowl and add lemon juice to coat the apples. Add the remaining ingredients, including the cooked rice; stir well. Serve immediately or chill for later.
*Remember that you can use regular brown rice. In fact, I like the taste and texture of regular rice, but it does take longer to cook. Use whichever you like.
