Creamed Potatoes with New Peas

Makes about 8 servings

4 lbs. small new potatoes, unpeeled except for strip around middle

Sauce:
1/2 cup butter or margarine
1/2 cup unsifted all-purpose flour
2 cups chicken broth
2 cups milk
2 1/2 teaspoons salt
1/4 teaspoon white pepper
1/4 cup chopped parsley
2 10-oz. packages frozen green peas, cooked and drainedIn large saucepan heat 1 inch salted water to boiling. Add potatoes and return to a boil; cover and cook 15 to 20 minutes, until tender. Drain, keep warm.

For sauce:
Meanwhile, in medium saucepan, melt butter or margarine over low heat. Stir in flour and blend until smooth; allow mixture to bubble for about 1 minute. Gradually stir in chicken broth, milk, salt and pepper. Cook until thick and smooth, stirring frequently. Fold in parsley and peas.

Combine new potatoes and sauce, spoon into serving bowl.
