Recipe: Creamed Tuna Fish on Toast

Creamed Tuna Fish on Toast

Makes approximately six single servings

Here's one our grandmothers and moms used to make for us. My husband and I still do this a couple of times a month. Our family prefers it without the peas.

1 (6 1/2 oz.) can tuna fish (do not drain)
1 can evaporated milk
flour and water for thickening
salt and pepper to taste
1/2 cup peas (optional)
Buttered Toast

Put undrained tuna, evaporated milk and peas (if desired) in a saucepan. Heat still steaming (not boiling) over medium heat. Mix flour and water as you would for gravy thickening (how much you use depends on how thick you want it). Pour into tuna and milk and stir constantly to desired thickness. Add salt and pepper to taste and serve over hot buttered toast.
