Recipe: Sloppy Joe Rotini (skillet meal)

SLOPPY JOE ROTINI

1 pound ground beef
2 cups uncooked rotini pasta (6 oz)*
2 cups frozen whole kernel corn
1 cup water
1 small zucchini, sliced (1 cup)
1 (15 1/2 oz) jar extra-thick-and-chunky sloppy Joe sauce

Cook beef in 10-inch nonstick skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.

Stir in remaining ingredients. Heat to boiling; reduce heat to medium. Cover and simmer about 15 minutes, stirring occasionally, until pasta is tender.

*Add a different "twist" to this recipe by using cavatappi, fusilli, gemelli or rotelle pasta.

VARIATION:
Sprinkle 1 cup shredded Cheddar cheese over the pasta before serving. Cover and let stand until melted.

Makes 4 servings
