Will those who make the following recipe, please post if you think it is in the recipe for the Tennessee Tea Cakes sold in Nashville, TN?
TENNESSEE TEA CAKE MINI MUFFINS
1 stick butter
1 1/2 cups firmly packed dark brown sugar
2 eggs, beaten
1 1/2 tsp. vanilla
1 tsp almond extract
1/2 tablespoon orange juice
1 1/2 cups all-purpose flour
1/4 teaspoon salt
Powdered sugar
Melt butter in a medium saucepan over medium heat; add brown sugar and stir until dissolved. Set the pan aside to cool.
When cool, stir in eggs, vanilla, almond extract and orange juice. Combine with flour and salt, stirring to blend. Spoon the batter into mini muffin cups.
Bake at 350 degrees F about 15 minutes. While warm, coat with powdered sugar. Cakes should be a bit moist, not dry.
