Recipe: Crunchy Fried Tomatoes (red or green tomatoes)

CRUNCHY FRIED TOMATOES

4 firm red ripe or green medium tomatoes
1 egg, beaten
1 cup dry bread crumbs
1/3 cup butter or margarine
Salt and pepper

Cut tomatoes into 3/4-inch slices. Dip into egg and then into crumbs.

Melt butter in large skillet. Add tomato slices and cook until golden brown on each side. Season to taste with salt and pepper.

Makes 4 servings
