GREEN BEANS AND BACON
1 pound fresh green beans (or 2 packages, 12 ounces each frozen green beans)
4 bacon slices, diced
1/3 cup finely chopped onion
2 tablespoons cider vinegar
2 tablespoons water
2 tablespoons sugar
1/4 teaspoon sugar
1/4 teaspoon monosodium glutamate (optional)
1/8 teaspoon ground pepper
1 tablespoon chopped pimento
Rinse fresh green beans. Snap off ends. Cut in half crosswise. Cook in boiling water until tender, about 15 to 20 minutes. (If using frozen green beans, prepare according to package directions.)
Meanwhile, cook the bacon in a skillet until crisp.
Add the onion, vinegar, water, sugar, salt, monosodium glutamate and pepper to the skillet. Bring to a boil.
Drain beans. Transfer to a bowl. Add pimento. Pour bacon mixture over beans. Toss lightly.
Makes 4 servings
