Recipe(tried): Creme Brulee
Misc.I have found this to be an easy but very good recipe.
Creme Brulee
2 cups heavy or whipping cream
1 cup half and half
1 teaspoon vanilla extract
6 large egg yolks
3/4 cup sugar, divided
Preheat oven to 300 degrees. Combine cream and half and half in medium pan. Bring to just to boil over medium heat; cover and let stand 15 minutes. Whisk egg yolks and 1/2 cup sugar in medium bowl until light. and sugar dissolved. Slowly whisk in warmed cream until smooth. Stir in vanilla extract. Strain through sieve into big bowl or cup with pouring spout. Pour from bowl, again through the sieve, into 6 custard cups. Set the cups in a 9x13 inch pan and pour boiling water into pan to come halfway up sides of cups. Bake 25-30 minutes or until barely set in center. Don't overbake as it sets a little more as it cools. let stand in water bath 10 minutes. Set cups on wire rack to cool completely. Cover and refrigerate at least 3 hours, or overnight. Preheat broiler. sprinkle remaining 1/4 cup sugar on tops of creme. Put cups in the 9x13 inch pan again, only this time pout in ice water up to halfway up sides of cups. Broil 3 inches from heat. keep an eye on it and rotate pan if necessary--usually 2-3 minutes if enough to turn tops amber colored. Remove from roasting pan and refrigerate at least 2 hours before serving. Serves 6.
some people perfer not to chill this last time.
