BAKING IN YOUR ELECTRIC SKILLET:
Certain kinds of cakes, such as coffee cakes, cake mixes, and any muffin or modified conventional method cake can be acceptably baked in an electric skillet. The bottom and sides will brown nicely, however, the top will not brown.
The following cake recipes are for the Presto 15-inch Jumbo Electric Skillet. When baking cakes in a Presto 11-inch or 12-inch Skillet, use either a packaged mix that prepares an 8-inch layer cake or up to 4 cups of batter.
If the top of the cake seems too moist when done, remove the cover and continue to bake for about 5 minutes to evaporate moisture.
TO BAKE A PACKAGED CAKE MIX:
1 box packaged cake mix (chocolate, spice, white, golden, or gingerbread)
Line the bottom of the electric skillet with one layer of aluminum foil. Remove foil liner and preheat skillet to 275 degrees F with the cover on.
Prepare cake mix according to the directions on the package. Replace foil liner in skillet and pour batter into skillet.
Place cover slightly ajar on skillet and bake 45 minutes or until done. Place plate over skillet and invert to remove cake. Remove liner while cake is still hot.
TO BAKE A HOMEMADE CAKE:
To bake your favorite cake recipe in an electric skillet, follow the above general directions for packaged cake mixes.
Bake at 275 degrees F for the recommended time or until done.
