Recipe(tried): Creole Baked Goat Cheese

This is from a restaurant chain I work at. I'm not sure if I'll get in trouble for saying their name so if you've had it before you'll know what I'm taking about. This is really good served with sliced baguette or Cuban bread croutons!
1 tbsp blended oil or olive oil
3 tbsp yellow onion (1/4-inch diced)
1 1/2 tbsp chopped garlic
1/2 lb. fresh goat cheese, drained
1/2 lb. Roma tomatoes, seeded and 1/4-inch diced
1 1/2 tbsp chopped fresh cilantro
1 1/2 tbsp chopped fresh parsley
1 1/8 tsp. Tony's creole seasoning
Heat olive oil in a medium saute pan over medium heat, then add the onion and garlic and saute just until the onion become translucent (do not brown). Remove from heat and transfer to a paper lined pan. Place in freezer for 15 minutes to cool.
Place goat cheese in a mixing bowl and soften with a rubber spatula.
Drain all excess juice from tomatoes. Add with all ingredients to softened goat cheese and mix evenly with rubber spatula until no visible white lumps.
You can eat cold on croutons or heat in oven at 350 degrees F for about 10 minutes.
They serve theirs in a roasted red pepper cup which looks fancier but isn't totally necessary.
