Recipe(tried): Crockpot Corned Beef and Cabbage, Irish Soda Bread, Pistachio Cake

Happy St. Patrick's Day to you. It is actually St. Patrick's Day Eve, but soon it will be Monday morning. We had a fabulous weekend of weather, tonight we threw an impromptu picnic together and grilled out hamburgers and had them with potato salad and chips. Just like summer! It was so nice to pretend that it will stay warm! But we had fun, anyway, and enjoyed the springlike days while they lasted! Tomorrow, we're having standard St. Patrick's Day fare, and I'm making the corned beef brisket in the crockpot. I'm not a huge fan of corned beef, unless it's on a Reuben sandwich, but the rest of the family loves it. The recipe I use for Irish soda bread is downstairs, and I'm upstairs, so if anyone wants the recipe let me know and I'll be happy to post it later. Hope you enjoy the recipes!
Crockpot Corned Beef and Cabbage
4 lb. corned beef brisket
1/2 tsp. pepper
2 medium onions, cut in quarters
3 TBSP. vinegar
1 head of cabbage, cut into wedges
3 TBSP. sugar
(water amount missing - refer to this recipe, click here)
Combine all ingredients in a slow cooker. Cook on High for 1 hour, then on low 6 or 7 hours.
Pistachio Cake
1 white cake mix
1 pkg. instant pistachio pudding mix
5 eggs
1/2 cup vegetable oil
1-1/2 cups milk
Icing:
1 pkg pistachio pudding mix
1 (8 oz.) carton Cool Whip
1 cup milk
Preheat the oven to 350 degrees. Grease and flour a 9X13 pan. In large mixing bowl, mix together cake mix, pudding mix, milk, eggs, and oil. Beat for 2 minutes. Pour into prepared pan. Bake for approx. 40-45 minutes. Test with toothpick to see if it's done. It should be golden brown on top. Let cool. Meanwhile, prepare icing. Whisk pudding mix and milk. Fold in Cool Whip. Spread on cooled cake. Refrigerate several hours before serving.
