Crown Roast of Pork

Preheat oven to 450F.
Protect ends of bones by covering them with aluminum foil. Immediately after putting roast in oven reduce heat to 350 deg F. Cook, allowing 30-45 minutes to the pound.
If roast is not to be stuffed, omit covering bones and cook roast upside down. Serve filled with a cooked vegetable.
If roast is to be served stuffed remove one hour before done and fill center with a dressing (e.g., sausage or apple and onion or fruit).
