CUCUMBER MINT SALAD
2 large cucumbers
1/4 teaspoon salt
4 tablespoons finely chopped flat-leaf parsley
Grated rind from half an orange
8 tablespoons olive oil
8 tablespoons red-wine vinegar
5 tablespoons sugar
8 tablespoons finely chopped fresh mint
Peel and thinly slice cucumbers. Place them in a colander and sprinkle with salt. Let drain for 30 minutes.
In a large bowl, whisk together the parsley, orange rind, olive oil, vinegar and sugar until sugar is dissolved. Whisk in the mint.
Dry the cucumbers with a paper towel or absorbent cloth. Add to vinaigrette. Toss. Chill for several hours before serving.
Makes 6 servings
