I just found this and I think it is the original recipe. The author substituted white vinegar for red wine vinegar and I would definitely use the red wine vinegar. She also added burgundy which the original recipe did not have it. I don't recall splitting the hens either for that matter.
CURRIED CORNISH HENS
2 cornish hens, thawed and split in half lengthwise
1 medium-size red onion, chopped (approx. 1 cup)
1/2 stick (1/4 cup) butter
1 tbsp. curry powder
1 tsp. salt (optional)
1/4 tsp. ground black pepper
1/4 tsp. tarragon
1/2 cup white vinegar*
1 tbsp. burgundy
Preheat oven to 425 degrees F.
Wash and dry hens, cut in half lengthwise and place in baking dish cut side down.
Combine onion and butter in small sauce pan, heat till butter is melted and onion is almost tender, then add curry powder, salt, pepper, tarragon, burgundy and white vinegar. Cook a few more minutes and then pour over hens.
Bake in preheated oven, turning and basting once or twice for 45 minutes until hens are golden brown.
*This recipe originally called for 1/2 cup of red wine vinegar but since that would be too high carb, I substituted 1/2 cup of white vinegar and added 1 tablespoon of burgundy and it turned out just fine.
