Recipe: Debbie, Chili Basted Roasted Chicken in

Main Dishes - Chilis, Stews

claypot in the microwave. Sorry, it took sooo long for me to
post these, but it has just been nuts!

Chili Basted Roasted Chicken

1 whole frying chicken, about 3 1/2 lbs
1 med. onion, thinly sliced, separated into rings
1 clove garlic, minced
1/2 C catsup
2 T brown sugar
1 T cider vinegar
1 tsp chili powder
1 tsp worcestershire sauce

Soak top & bottom of 3 1/4 qt. clay cooker in water about 15
min.; drain.

Rinse chicken, pat dry, reserving giblets for other use. Place
chicken breast side up, in cooker; surround with onion rings.
Mix garlic, catsup, brown sugar, vinegar, chili powder and
worcestershire sauce; drizzle over chicken.

Place covered cooker in microwave oven. Microwave on full power,
basting two or three times w/sauce, until chicken is glazed &
tender, 30 to 35 min.

Carve chicken; spoon onions & sauce over chicken.

Kids love this, it is similar to barbecue.
